Ingredients

For the crust:

  • 1 head cauliflower florets separated
  • 2 eggs
  • 1 tsp sea salt
  • 150 g parmesan cheese grated

For the topping:

  • 100 g gouda cheese grated
  • 1 green bell pepper sliced
  • 1 handful baby spinach

Instructions

  • Preheat the oven to 200°C.
  • Line a tray with baking paper and set it aside.
  • Add all the keto pizza crust ingredients to a food processor.
  • Process everything at high speed until a homogeneous, sticky puree forms.
  • Brush the prepared baking paper with a little oil.
  • Transfer the keto pizza crust dough onto the prepared baking tray. Flatten it with your fingers and shape it into a round about 1 cm thick.
  • Bake for about 7-10 minutes, or until lightly golden.
  • Take it out of the oven and top with the grated gouda cheese, sliced green bell pepper and some baby spinach.
  • Return to the oven and bake for about 7 more minutes.
  • Top with some fresh basil and serve!

Notes

Best served fresh and hot, straight from the oven. For a strictly vegetarian version, look for parmesan and gouda made with vegetarian (non-animal) rennet.
