Chocolate Marble Cake

Looking for a sweet treat to go with your morning coffee? This vegan chocolate marble cake is tender, lightly spiced with vanilla, and swirled with cocoa for a beautiful marbled crumb.

Ingredients 

  • 2 ½ cup all-purpose flour
  • 1 ½ cup coconut sugar
  • ¾ cup vegan butter
  • ¼ cup sunflower oil
  • 1 cup soy yogurt
  • ½ cup cocoa powder
  • ½ cup almond milk
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • ¾ tsp salt
  • 3 Tbsp simple syrup

Instructions

  • In a large bowl, beat the sugar with the vegan butter and oil.
  • Add the yogurt, milk, and vanilla extract, and mix until combined.
  • Add the flour, salt, and baking powder, and mix until creamy.
  • Grease a Bundt pan with butter or oil.
  • Pour 3/4 of the batter into the pan.
  • Add the cocoa powder to the remaining batter, mix to combine, then pour it into the pan.
  • Use a knife to swirl the two batters together.
  • Bake at 180 degrees C (350 degrees F) for 50-60 minutes, until a toothpick comes out clean.
  • Remove from the pan and brush with simple syrup while still warm.

Notes

Swirl the two batters with just a few figure-eight passes; over-mixing loses the marble pattern. Brush the simple syrup on while the cake is still warm so it soaks in. Store covered at room temperature for up to 3 days.
