Looking for a sweet treat to go with your morning coffee? This vegan chocolate marble cake is tender, lightly spiced with vanilla, and swirled with cocoa for a beautiful marbled crumb.
In a large bowl, beat the sugar with the vegan butter and oil.
Add the yogurt, milk, and vanilla extract, and mix until combined.
Add the flour, salt, and baking powder, and mix until creamy.
Grease a Bundt pan with butter or oil.
Pour 3/4 of the batter into the pan.
Add the cocoa powder to the remaining batter, mix to combine, then pour it into the pan.
Use a knife to swirl the two batters together.
Bake at 180 degrees C (350 degrees F) for 50-60 minutes, until a toothpick comes out clean.
Remove from the pan and brush with simple syrup while still warm.
Notes
Swirl the two batters with just a few figure-eight passes; over-mixing loses the marble pattern. Brush the simple syrup on while the cake is still warm so it soaks in. Store covered at room temperature for up to 3 days.
