Clear Noodle Soup

This soothing clear noodle soup with vegetables is your go-to comfort recipe for those days when you're feeling under the weather. Light, brothy, and ready in about 30 minutes.

Ingredients 

  • 3 carrots sliced or cut in chunks
  • 3 potatoes cubed
  • 2 onions cut in quarters
  • 120 g noodles
  • 1 tsp olive oil
  • salt and ground pepper to taste
  • parsley chopped, lots
  • 3 L water or vegetable stock

Instructions

  • Fill a pot with the water or vegetable stock (around 3L) and add the carrots, potatoes, and onions.
  • Let them boil for 15 minutes, then add the noodles, salt, and pepper.
  • Boil for another 10 minutes.
  • Add the olive oil and remove from the heat.
  • Serve with lots and lots of fresh, chopped parsley!

Notes

The noodles thicken the soup as it stands, so add fresh noodles per serving or loosen with a little extra liquid when reheating. Store leftovers in the fridge for up to 3 days.
