This soothing clear noodle soup with vegetables is your go-to comfort recipe for those days when you're feeling under the weather. Light, brothy, and ready in about 30 minutes.
Fill a pot with the water or vegetable stock (around 3L) and add the carrots, potatoes, and onions.
Let them boil for 15 minutes, then add the noodles, salt, and pepper.
Boil for another 10 minutes.
Add the olive oil and remove from the heat.
Serve with lots and lots of fresh, chopped parsley!
Notes
The noodles thicken the soup as it stands, so add fresh noodles per serving or loosen with a little extra liquid when reheating. Store leftovers in the fridge for up to 3 days.
