Flavorful Vegan Chickpea Patties

Make these flavorful vegan chickpea patties in just half an hour! They're healthy, protein-rich and delicious, plus the subtle rosemary aroma will make you fall in love with this recipe.

Ingredients 

  • 800 g chickpeas canned, drained
  • ¼ cup fresh parsley chopped
  • 1 onion diced
  • 4 tablespoons psyllium husks or one large egg for a non-vegan version
  • 4 tablespoons nutritional yeast flakes
  • ½ cup flour I used chickpea flour
  • 4 tablespoons fresh rosemary leaves chopped
  • sea salt and ground pepper to taste
  • oil for frying

Instructions

  • Drain the chickpeas and put them in a large bowl. Start mashing them with a fork or an immersion blender. Add the rest of the ingredients, except the oil.
  • Mix everything together. The composition should be sticky and easy to shape into patties.
  • Lightly grease a non-stick pan with some oil. Place each patty in the pan and fry for about 2 minutes on each side, until golden.
  • Serve with a big salad or a side dish of your choice.

Notes

If you don't want to fry all the chickpea patties at once, keep the mixture in the fridge, covered with plastic wrap. It keeps for about 3 days. Whenever you want a fresh patty, scoop out some of the mixture, shape it and fry it. Serve warm with a big salad or your favorite side dish.
