French Toast Casserole

Turn classic French toast into an easy baked casserole, with buttery caramelized coconut sugar and cinnamon soaked into golden sourdough cubes. Perfect for weekend brunches or a special family breakfast.

Ingredients 

  • ¼ whole sourdough bread cut into cubes
  • ¼ cup butter
  • ½ cup coconut sugar plus 1 Tbsp extra, for sprinkling on top
  • 3 eggs
  • 1 cup full-fat milk
  • 1 teaspoon vanilla bean or paste
  • 1 teaspoon cinnamon

Instructions

  • Heat the oven to 200 C (392°F).
  • Grease the casserole dish with some butter and set it aside.
  • In a small pot, melt the butter over low heat.
  • Add the sugar and mix until you get a creamy, uniform mixture.
  • Pour the butter and sugar mixture into the greased casserole dish so that it covers the bottom in an even layer.
  • Then arrange the bread cubes in a single layer.
  • In a bowl, whisk together the eggs, milk, vanilla and cinnamon. Pour the mixture over the bread so it covers and soaks all the cubes.
  • Sprinkle the reserved tablespoon of coconut sugar over the top.
  • Bake for 25-30 minutes, or until golden and browned at the edges.
  • Serve with cream cheese or ice cream.

Notes

Best served warm, straight from the oven. Store leftovers covered in the fridge for up to 3 days and reheat in the oven or microwave before serving.
