Gluten-Free Grilled Vegan Cheese Sandwich - with vegan cheese that actually melts!
This gluten-free grilled vegan cheese sandwich is super easy to make, budget-friendly and packed with melty, dairy-free flavor - and best of all, the vegan cheese actually melts! Ready in about 15 minutes.
2slicesgluten-free toast breadI used rustic white GF Schar bread; 2 slices per sandwich
wild garlic leavesoptional; a few leaves, about 2 chopped leaves per sandwich
½tbspolive oil
Instructions
Brush the bread slices and the sandwich maker with a little olive oil.
Assemble the sandwiches with the vegan mozzarella (and wild garlic, if using) and place them in the sandwich maker.
Grill until golden and the cheese has melted, then serve hot.
If you don't have a sandwich maker, assemble the sandwiches and grill them on the stove using a grill pan.
Notes
Use a melting-style vegan mozzarella rather than a firm block, and slice it thin so it melts through before the bread over-browns. Best served hot and fresh off the grill.
