Gozleme

Gozleme is a traditional Turkish stuffed flatbread, made vegan here with a savory tofu, onion, and dill filling. Pan-cooked until golden and ready in under an hour.

Ingredients 

For the dough:

  • 1 cup flour
  • 1 Tbsp yogurt vegan or dairy
  • 3 Tbsp olive oil
  • ¼ cup water
  • 1 tsp salt

For the filling:

  • 1 cup tofu grated; or use teleme cheese for a non-vegan version
  • 1 onion chopped
  • ½ cup dill finely chopped
  • 1 Tbsp yogurt vegan or dairy
  • salt to taste
  • pepper to taste
  • olive oil for cooking

Instructions

  • Combine the flour and salt in a bowl.
  • Add the yogurt and olive oil, and mix well.
  • Pour in the water a little at a time and mix until a dough forms and no longer sticks to the bowl.
  • Cover and let rest for 15 minutes.
  • In a pan, heat 1-2 Tbsp of olive oil and sauté the onion.
  • When translucent, add the tofu, season with salt and pepper, and cook for 5 minutes.
  • Transfer to a bowl and let cool for 3-5 minutes.
  • Add the yogurt and finely chopped dill, and adjust the seasoning.
  • Split the dough into 4-5 pieces.
  • Roll out each piece into a thin circle.
  • Spread 2-3 Tbsp of the tofu mixture over half of each circle.
  • Fold the remaining half over to close the gozleme and pinch the edges shut with your fingers.
  • Heat 1 Tbsp of olive oil in a pan over medium heat and cook the gozleme until golden brown on both sides.

Notes

The tofu filling can be prepared a day ahead and kept refrigerated. For a non-vegan version, swap the tofu for teleme cheese and use dairy yogurt.
