Gozleme
Gozleme is a traditional Turkish stuffed flatbread, made vegan here with a savory tofu, onion, and dill filling. Pan-cooked until golden and ready in under an hour.

Ingredients
For the dough:

flour

yogurt
vegan or dairy

For the filling:

tofu
grated; or use teleme cheese for a non-vegan version

onion
chopped

dill
finely chopped

Instructions
Combine the flour and salt in a bowl.
Add the yogurt and olive oil, and mix well.
Pour in the water a little at a time and mix until a dough forms and no longer sticks to the bowl.
Cover and let rest for 15 minutes.
In a pan, heat 1-2 Tbsp of olive oil and sauté the onion.
When translucent, add the tofu, season with salt and pepper, and cook for 5 minutes.
Transfer to a bowl and let cool for 3-5 minutes.
Add the yogurt and finely chopped dill, and adjust the seasoning.
Split the dough into 4-5 pieces.
Roll out each piece into a thin circle.
Spread 2-3 Tbsp of the tofu mixture over half of each circle.
Fold the remaining half over to close the gozleme and pinch the edges shut with your fingers.
Heat 1 Tbsp of olive oil in a pan over medium heat and cook the gozleme until golden brown on both sides.
Notes
The tofu filling can be prepared a day ahead and kept refrigerated. For a non-vegan version, swap the tofu for teleme cheese and use dairy yogurt.
