Hearty Beans Soup

Ingredients 

  • 2 cans Cannelini beans 2 small 14oz cans
  • 1 can diced tomatoes canned, small 14 oz can
  • 5 cups vegetable broth or water
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 fresh green chili finely chopped
  • 1 cup frozen corn
  • 1 Tbsp olive oil
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • ½ lime juiced
  • fresh parsley

Instructions

  • Pulse 1 can of undrained beans in a blender or food processor. Don’t mash them completely.
  • In a pot, sautee the onion and garlic in 1 Tbsp of olive oil until translucent.
  • Drain and rinse the second can of beans and add them to the pot.
  • Add the pulsed beans, diced tomatoes, corn, veggie broth, green chili, chili powder and season with a little salt and pepper.
  • Partially cover and simmer for 15-20 minutes.
  • Add more broth if the soup thickens too much.
  • Adjust the seasoning and squeeze the juice of 1/2 lime.
  • Serve with fresh parsley.
