How to make porridge - perfect every time!

Learn how to make creamy oat porridge perfectly every time in about 20 minutes, with simple tips and delicious topping ideas to customize your bowl.

Ingredients 

  • ½ cup oats coarse
  • 1 ½ cup water
  • 1 pinch salt

Toppings:

  • frozen or fresh berries my mix contained black and red currants, raspberries, blackberries, strawberries and even some pitted sour cherries
  • 1 Tbsp sugar-free preserved lemon zest
  • 2-3 Tbsps coconut flakes
  • date syrup to taste
  • 1 Tbsp sugar-free blueberry jam

Instructions

  • Add the oats to a pot, then pour in the water and add a pinch of salt.
  • Bring to a boil over high heat, then lower the heat to medium-low.
  • Stir constantly using a wooden spoon.
  • Once it thickens, it's ready - about 10-15 minutes in my case.
  • Pour the porridge into a bowl.
  • Add the toppings and serve right away.

Notes

Store leftover porridge in an airtight container in the fridge for up to 2 days. Reheat with a splash of water or plant milk, stirring until creamy again. Swap the toppings freely - fresh fruit, nuts, seeds or a drizzle of nut butter all work beautifully.
