Hungry, uninspired, and after a super quick fix? This creamy vegan hummus pasta is one of the quickest, easiest dinners you can make, ready in about 15 minutes.
Cook about 8 minutes, until the pasta is al dente.
Reserve about 2 Tbsp of the pasta water, then drain the rest.
In the same pot, add the hummus and nutritional yeast and stir to combine.
Add the baby spinach, white pepper, and the 2 Tbsp reserved pasta water. Set the pot back over the heat and give it a quick stir to combine everything, wilt the spinach, and let the liquid soak in.
Serve immediately with chopped chives and a drizzle of olive oil.
Notes
Serve immediately while the sauce is still creamy. Reserve a little pasta water before draining, it loosens the hummus into a silky sauce. Leftovers keep in the fridge for up to 2 days; add a splash of water when reheating.
