Ingredients

  • 200 g linguine or tagliatelle pasta
  • ½ cup hummus homemade
  • 1 Tbsp nutritional yeast
  • 1 cup baby spinach
  • 2 Tbsp chives chopped
  • olive oil extra, to taste
  • white pepper to taste
  • salt to taste

Instructions

  • In a large pot, bring water to a boil.
  • Add salt and pasta.
  • Cook about 8 minutes, until the pasta is al dente.
  • Reserve about 2 Tbsp of the pasta water, then drain the rest.
  • In the same pot, add the hummus and nutritional yeast and stir to combine.
  • Add the baby spinach, white pepper, and the 2 Tbsp reserved pasta water. Set the pot back over the heat and give it a quick stir to combine everything, wilt the spinach, and let the liquid soak in.
  • Serve immediately with chopped chives and a drizzle of olive oil.

Notes

Serve immediately while the sauce is still creamy. Reserve a little pasta water before draining, it loosens the hummus into a silky sauce. Leftovers keep in the fridge for up to 2 days; add a splash of water when reheating.
