Crispy golden kohlrabi fritters with carrot, green onion and sharp Cheddar - a simple, savory way to enjoy this underrated vegetable, ready in about 30 minutes.
In a bowl, combine the grated kohlrabi, carrot and green onion. Squeeze out excess liquid if necessary.
Add the eggs, flour, cheese, salt and pepper. Mix well until you get a homogeneous batter.
Heat a pan over medium heat and add a little olive oil or ghee.
Use a spoonful of the mixture for each fritter. Fry for 4 to 5 minutes on each side, until golden.
Serve the fritters warm, with a mayonnaise sauce or any other sauce of your choice.
