Loaded Vegan Nachos

Mexican dinner? Movie night? Regardless of the occasion, these loaded vegan nachos are the BEST snack! Here’s how to make them in 15 minutes!

Ingredients 

  • 200 g nachos - natural flavored tortilla chips
  • 1 vegan burger patty I used Verdino, but you can use Beyond Burger or any other brand you like
  • 2 tomatoes chopped
  • 1 red pepper chopped
  • jalapeno slices pickled - to taste
  • 100 g grated cheese - any melty cheese you like
  • sour cream - you can use store-bought vegan sour cream. Try my homemade version or use dairy if you don't want this recipe to be vegan
  • herbs - chopped cilantro, parsley or fresh oregano

Instructions

  • In a small oven pan (mine was around 20x30cm), add the nacho tortilla chips.
  • Top with chopped tomatoes, pepper, shredded vegan burger patty, pickled jalapeno slices and grated cheese.
  • Bake in the oven for ~15 minutes at 200C.
  • Serve hot with sour cream and herbs on top.
