Spread the goat cheese cream all over the puff pastry sheet.
Cover with a single layer of tomato and olive slices, then sprinkle with the grated hard goat cheese.
Season with salt, pepper and thyme, then drizzle with olive oil.
Place in the oven and bake for 30 minutes, or until the edges are golden brown.
Serve hot, with an extra drizzle of olive oil.
