Choose Serving Size 20 millet cakes

Ingredients

  • 1 cup millet boiled
  • 50 g feta cheese mashed with a fork
  • 6 cloves garlic mashed
  • 2 eggs
  • breadcrumbs as needed, to bind
  • 4 tomatoes chopped
  • ground pepper to taste

Instructions

  • Add all the ingredients except the breadcrumbs to a large bowl and mix well.
  • The mixture may be a little watery, so add the breadcrumbs. Start with 3 tablespoons and wait a couple of minutes so they absorb the excess liquid, then add more if needed.
  • There are 2 ways to cook the millet cakes: 1. frying or 2. baking.
  • To fry: grease a non-stick pan with a little oil and add the patties, using about 1 tablespoon of mixture per patty. Fry 1-2 minutes on each side.
  • To bake: grease an oven tray with a little oil, add the patties and bake for 25-30 minutes at 200C (400F).

Notes

Feta is salty, so taste before adding any salt. Add the breadcrumbs gradually and let them absorb the tomato and egg liquid for a couple of minutes before judging the texture.
