Savory millet cakes bound with feta, garlic and fresh tomatoes, ready in about 30 minutes and delicious fried or baked. Serve them with a salad or tuck them into a veggie burger.
Add all the ingredients except the breadcrumbs to a large bowl and mix well.
The mixture may be a little watery, so add the breadcrumbs. Start with 3 tablespoons and wait a couple of minutes so they absorb the excess liquid, then add more if needed.
There are 2 ways to cook the millet cakes: 1. frying or 2. baking.
To fry: grease a non-stick pan with a little oil and add the patties, using about 1 tablespoon of mixture per patty. Fry 1-2 minutes on each side.
To bake: grease an oven tray with a little oil, add the patties and bake for 25-30 minutes at 200C (400F).
Notes
Feta is salty, so taste before adding any salt. Add the breadcrumbs gradually and let them absorb the tomato and egg liquid for a couple of minutes before judging the texture.
