A rich, molten Nutella pudding baked in individual ramekins and topped with airy whipped cream and crunchy caramelized pretzels for the perfect sweet-and-salty contrast. Simple to make and ready in about 35 minutes.
100gwhipping creamheavy cream, min. 30% fat, well chilled
Instructions
Preheat the oven to 180°C (350°F).
Heat a pot over medium heat and add the sugar. Let the sugar melt, stirring from time to time, until it turns into a liquid caramel. Add the pretzels to the caramel, stir to coat, then transfer to a flat tray to cool.
Separate the egg whites from the yolks into two separate bowls.
In the bowl with the egg yolks, add the Nutella and beat with a mixer until the mixture becomes light and foamy.
In the other bowl, beat the egg whites until they are foamy and hold their shape in stiff peaks.
Gradually fold the beaten egg whites into the Nutella mixture, a little at a time, until fully incorporated.
Divide the mixture evenly among 4 ramekins.
Bake the puddings for 20-25 minutes.
While the puddings bake, whip the cream until you get a soft, fluffy whipped cream.
Break the caramelized pretzels into pieces.
Serve the warm puddings topped with whipped cream and caramelized pretzel pieces.
Notes
Best served warm, straight from the oven, so the centre stays soft. Caramelize the pretzels just before serving so they keep their crunch. Any leftover puddings can be covered and refrigerated for up to 2 days, then gently reheated.
