Pink Falafels

Ingredients

beetroot
1
head
garlic

chickpeas
canned, drained

Tbsp
parsley
finely chopped

tsp
ground cumin
1
onion
chopped

sea salt

tsp

Instructions
Preheat the oven to 250C.
Rinse the beetroot and pat dry.
Wrap the beetroot in aluminum foil and bake until a fork inserts easily, about an hour.
Let it cool, peel, cut into large cubes, and set aside.
Add the cubed beetroot and all the remaining ingredients to a food processor.
Pulse until well combined.
To form the falafel, scoop a tablespoon of the mixture into your hands and press to shape small patties.
Place the patties on a baking tray and bake in the preheated oven for about 20 minutes.
Serve with greens, fresh veggies, and tahini sauce.
Notes
Use only one beetroot -- more moisture makes the mixture soggy. Store leftovers in an airtight container in the fridge for up to 3 days.
