Pink Falafels

Bored of the classic falafel? Get ready for a splash of pink! These pink falafels made with beetroot are super healthy, super delicious, and super gorgeous as well!

Ingredients 

  • 1 beetroot
  • 1 head garlic
  • 400 g chickpeas canned, drained
  • 6 Tbsp parsley finely chopped
  • 1 tsp ground cumin
  • 1 onion chopped
  • 1 tsp sea salt
  • 1 tsp ground pepper

For serving:

  • tahini sauce for serving
  • salad leaves your favorite, for serving
  • fresh veggies for serving

Instructions

  • Preheat the oven to 250C.
  • Rinse the beetroot and pat dry.
  • Wrap the beetroot in aluminum foil and bake until a fork inserts easily, about an hour.
  • Let it cool, peel, cut into large cubes, and set aside.
  • Add the cubed beetroot and all the remaining ingredients to a food processor.
  • Pulse until well combined.
  • To form the falafel, scoop a tablespoon of the mixture into your hands and press to shape small patties.
  • Place the patties on a baking tray and bake in the preheated oven for about 20 minutes.
  • Serve with greens, fresh veggies, and tahini sauce.

Notes

Use only one beetroot -- more moisture makes the mixture soggy. Store leftovers in an airtight container in the fridge for up to 3 days.
