Fudgy, flourless black bean brownies packed with plant protein and naturally sweetened with dates and banana. A wholesome vegan dessert that's ready in about 35 minutes.
Cook and drain the black beans very well so they hold no liquid.
Add all the ingredients to the food processor (except the baking powder and nuts) and blend well until you get a smooth paste.
Add the baking powder and chopped nuts to the paste and use a spatula to combine.
Pour the batter into a baking dish (I used an 8x8 square one).
Bake at 180°C (355°F) for 20-25 minutes.
Let it cool before cutting into squares.
Notes
Pat the cooked black beans very dry before blending -- excess moisture is the most common cause of gummy brownies. Store in an airtight container in the fridge for up to 5 days.
