These crispy quinoa patties with feta cheese and black olives are ready in just half an hour. Golden on the outside and packed with Mediterranean flavor, they make a great vegetarian main or appetizer.
1bunchparsleyor dill, chopped (choose whichever you like)
2eggs
4Tbspbreadcrumbs
ground pepperto taste
Instructions
Add all the ingredients except the breadcrumbs to a large bowl and mix well.
The mixture may be a little watery, so add the breadcrumbs. Start with 3 tablespoons and wait a few minutes so they absorb the excess water.
There are 2 ways to cook the quinoa patties: 1. frying or 2. baking.
To fry: grease a non-stick pan with a little oil and add the quinoa patties, about 1 tablespoon of mixture per patty. Fry for 1-2 minutes on each side.
To bake: grease an oven tray with a little oil, add the quinoa patties and bake for 25-30 minutes at 200C.
Notes
Add the breadcrumbs gradually and wait a few minutes between additions so they absorb the excess moisture before you fry or bake the patties. Store leftovers in an airtight container in the fridge for up to 3 days.
