Quinoa Patties with Feta Cheese and Olives

These crispy quinoa patties with feta cheese and black olives are ready in just half an hour. Golden on the outside and packed with Mediterranean flavor, they make a great vegetarian main or appetizer.

Ingredients 

  • 1 cup quinoa boiled
  • 50 g feta cheese mashed with a fork
  • 1 onion diced
  • ½ cup black olives sliced
  • 1 bunch parsley or dill, chopped (choose whichever you like)
  • 2 eggs
  • 4 Tbsp breadcrumbs
  • ground pepper to taste

Instructions

  • Add all the ingredients except the breadcrumbs to a large bowl and mix well.
  • The mixture may be a little watery, so add the breadcrumbs. Start with 3 tablespoons and wait a few minutes so they absorb the excess water.
  • There are 2 ways to cook the quinoa patties: 1. frying or 2. baking.
  • To fry: grease a non-stick pan with a little oil and add the quinoa patties, about 1 tablespoon of mixture per patty. Fry for 1-2 minutes on each side.
  • To bake: grease an oven tray with a little oil, add the quinoa patties and bake for 25-30 minutes at 200C.

Notes

Add the breadcrumbs gradually and wait a few minutes between additions so they absorb the excess moisture before you fry or bake the patties. Store leftovers in an airtight container in the fridge for up to 3 days.
