Raw Almond-Chocolate Truffles

These raw vegan almond-chocolate truffles hide a juicy grape at their center for an irresistibly moist bite. No baking, ready in just 15 minutes.

Ingredients 

  • 1 cup almond pulp leftover from making almond milk
  • 6 dates pitted
  • ½ tsp rum extract
  • 15 grapes the secret ingredient that keeps these truffles moist and juicy
  • 3 tbsp carob powder

Instructions

  • Add the following ingredients to the food processor: almond pulp, dates, rum extract, and 1 tbsp carob powder.
  • Blend well until you get a smooth, sticky paste.
  • Transfer the mixture to a medium bowl.
  • On a separate plate, spread the remaining 2 tbsp of carob powder. You'll use this as coating.
  • Start making the truffles! Take 1 grape and cover it with the sticky paste, then roll it in your hands to form a small, round ball. Coat it in the carob powder and set aside. Repeat with the remaining grapes.
  • See how simple that was? Place them in the fridge or enjoy them right away!

Notes

Best enjoyed the same day, since the whole grape inside makes them perishable. Do not freeze, as the grape turns watery.
