Ready for some true comfort food, perfect for summer? These Greek-flavored vegan rice stuffed tomatoes are full of flavor and packed with tons of nutrients!
Cut off the top of each tomato and scoop out the insides with a spoon, reserving them for the filling.
In a bowl, combine the tomato insides, rice, cashews, onion, raisins, olives, and the julienned basil.
Add salt and pepper to taste. Mix to combine.
Fill each tomato with the rice mixture, top with the cut-off lids, place them in a baking dish, drizzle with olive oil, and bake for about 30 minutes, until they start to roast.

Notes
Don't discard the scooped-out tomato insides -- chop and stir them back into the filling so none of the flavor is lost. Serve warm or cold. Store leftovers in an airtight container in the fridge for up to 3 days.
