Roasted Tomatoes and Feta Cheese Pasta

Easy, comforting, and ready in about 30 minutes, this roasted tomatoes and feta cheese pasta is a fresh take on the viral TikTok baked feta pasta, with sweet roasted cherry tomatoes, creamy melted feta, and plenty of fresh basil.

Ingredients 

  • ~500 g cherry tomatoes I used both red and orange
  • 1 block Greek feta cheese 250g
  • 300 g pasta I used rigatoni
  • 10 fresh basil leaves chopped, plus a couple more for garnish
  • 3 tbsp olive oil
  • 2 tsp oregano
  • 6 cloves garlic
  • ground pepper to taste

Instructions

  • In a ceramic baking dish, add the cherry tomatoes and peeled garlic cloves. Place the block of feta cheese on top, in the middle.
  • Drizzle with olive oil and sprinkle with oregano and ground pepper.
  • Bake in the oven at 200C (400F) for about 25-30 minutes, until the tomatoes are soft and nicely roasted.
  • Meanwhile, boil the pasta according to the instructions on the package.
  • When ready, take the ceramic dish out of the oven. If you don't like the garlic whole, you can mash it with a fork; I prefer it whole, so I left it as is. Mash the feta cheese with a fork.
  • Drain the pasta and add it to the dish. Add the fresh chopped basil and mix well.
  • Serve immediately, garnished with the extra basil leaves.
  • Tip: I didn't add any more salt, because feta is salty enough for me. If you prefer it saltier, add salt to taste.

Notes

Feta is naturally salty, so no extra salt is needed by default. This recipe also works well with frozen cherry tomatoes. Store leftovers in an airtight container in the fridge for up to 3 days.
