Blondies are the buttery, vanilla-forward cousin of the brownie: no cocoa, all golden chewiness. These vegan chocolate-chip blondies are quick, easy and loaded with dark chocolate, ready in about 45 minutes.
In a bowl, cream the vegan butter and brown sugar using a hand mixer until light and fluffy.
Add the vanilla extract and combine.
In a separate bowl, mix together the flour, baking powder, cinnamon and salt, then add them to the butter and sugar mixture.
Mix with the hand mixer until a dough forms.
Fold in the chopped walnuts and dark chocolate.
Transfer to a greased and lined baking pan and bake at 170°C (340°F) for 20-25 minutes.
Let it cool completely before cutting into squares.
Notes
Do not overbake: pull them when the center still looks slightly soft, as they firm up as they cool. Store in an airtight container at room temperature for up to 4 days.
