Vegan Cinnamon Bread

This easy vegan cinnamon bread bakes up soft, warmly spiced, and lightly sweet, with no yeast and no eggs required. Mix it in one bowl and it's ready in about 35 minutes.

Ingredients 

Dry ingredients:

  • 250 g all-purpose flour
  • 1 teaspoon baking powder
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon baking soda
  • 1 pinch salt

Wet ingredients:

  • ¼ cup olive oil
  • ½ cup agave nectar
  • 1 teaspoon vanilla extract
  • 180 ml almond milk

For topping:

  • 2 Tbsp brown sugar
  • 1 tsp cinnamon
  • 2 tsp vegan butter melted

Instructions

  • Preheat the oven to 200°C (400°F).
  • Spray a large ramekin with cooking spray.
  • In a large bowl, add all the wet ingredients and whisk to combine.
  • In another bowl, add all the dry ingredients and mix to combine.
  • Stir the dry ingredients into the wet ingredients until just smooth, then set aside.
  • In a small bowl, mix all the topping ingredients.
  • Transfer the batter to the ramekin, brush with the topping mixture, and bake for about 25 minutes.
  • Decorate with fresh berries and dried rose petals, if desired.

Notes

Get the batter into the oven soon after mixing so the baking powder and baking soda give maximum lift, and avoid overmixing. Store leftovers in an airtight container for up to 2 days.
