Vegan Fruitcake

Ingredients 

  • ½ cup walnuts chopped
  • ½ cup pistachios chopped
  • ½ cup pumpkin seeds
  • ½ cup cranberries dried
  • ½ cup golden raisins
  • ½ cup dates pitted and chopped
  • ½ cup dried pineapple mix cubed
  • 3 Tbsp vegan butter melted; or regular, for vegetarian version
  • ½ cup sugar
  • 2 Tbsp psyllium husks or one egg, for vegetarian version
  • 2 tsp vanilla extract
  • 2 cups flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • tsp nutmeg
  • ¾ cup orange juice fresh
  • ½ cup cranberry juice

For the glaze:

  • 4 Tbsp powdered sugar
  • 1 Tbsp orange juice

Instructions

  • Preheat the oven to 180C
  • Brush a bundt pan with coconut oil. Set aside.
  • In a medium bowl add the flour, baking soda, cinnamon, nutmeg and salt. Mix together.
  • In a large bowl add the orange juice, cranberry juice, cranberries, dates, raisins, pineapple, walnuts, pistachios, pumpkin seeds, vanilla extract, sugar, psyllium husks (or egg), melted butter and mix together.
  • Add the flour mixture to the fruit mixture and combine well.
  • Pour into the prepared bundt pan and bake for about 45 minutes.
  • Let cool.
  • Meanwhile, whisk together the powdered sugar and orange juice.
  • Once the cake has cooled, drizzle it with glaze.
