Vegan Hot Chocolate - homemade

Rich, creamy vegan hot chocolate made with almond milk, real cocoa and melted chocolate chips, finished with a cool hit of peppermint. Ready in 15 minutes and topped with a cloud of vegan whipped cream.

Ingredients 

  • 4 cups almond milk
  • 4 Tbsp cocoa powder
  • ½ cup vegan chocolate chips
  • 1 Tbsp coconut sugar or brown sugar
  • 1 bean vanilla
  • ¼ tsp peppermint extract
  • 2 Tbsp chocolate shredded, for topping
  • 4 Tbsp vegan whipped cream

Instructions

  • Pour the almond milk into a pot, add the vanilla bean and the sugar, and heat on low until it just starts to simmer. Remove from the heat.
  • Whisk in the cocoa powder until well combined, then add the chocolate chips and let them sit for about a minute to melt.
  • Add the peppermint extract and whisk until smooth.
  • Remove the vanilla bean, divide the hot chocolate between cups and top with the vegan whipped cream and shredded chocolate.
  • Serve warm. Enjoy!

Notes

Take the pot off the heat before whisking in the cocoa and chocolate chips, so they melt gently without scorching. Leftovers keep in the fridge for up to 2 days - reheat on low and whisk well to bring the chocolate back together. Leave out the peppermint extract for a classic hot chocolate, or swap it for a pinch of cinnamon or chilli.
