Vegan Loaded Fries - The Best Toppings!

Satisfy your biggest hunger with a hearty portion of healthy vegan loaded fries, ready in about 50 minutes and topped with spicy tofu 'bacon', vegan cheese, avocado, and all the best toppings.

Ingredients 

For the fries:

  • 3 potatoes peeled and sliced into fries
  • 2 Tbsp olive oil
  • ½ tsp salt

For the "bacon":

  • ½ cup tofu sliced in small bits
  • ½ tsp cumin ground
  • ½ tsp smoked paprika
  • tsp chili peppers
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 Tbsp tamari sauce or soy sauce
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp water

For the topping:

  • 1 cup vegan cheese shredded
  • cup black olives sliced
  • 1 avocado peeled and cubed
  • cup cherry tomatoes sliced
  • 1 jalapeno finely chopped
  • 2 Tbsp spring onion sliced
  • 1 Tbsp vegan mayo
  • 2 Tbsp BBQ sauce

Instructions

  • Preheat the oven to 120°C (250°F).
  • Line a baking tray with baking paper.
  • In a small bowl, combine all the ingredients for the tofu "bacon" (tofu, spices, tamari, apple cider vinegar, and water) and mix until the tofu is evenly coated.
  • Spread the spicy tofu in a single layer on the prepared baking tray and roast for about 7 minutes, or until golden. Set aside.
  • Increase the oven temperature to 190°C (375°F).
  • On the same tray, add the sliced potatoes, brush them with olive oil, and sprinkle with salt. Roast until golden and crunchy, about 20 minutes.
  • Once the fries are roasted, turn off the heat.
  • Top the potatoes with the shredded vegan cheese and immediately return the tray to the oven. Let it sit for about 5 minutes, or until the cheese is fully melted.
  • Top with the spicy tofu, jalapeno, cherry tomatoes, avocado, black olives, vegan mayo, and BBQ sauce.
  • Sprinkle with the spring onions and enjoy!

Notes

The spice block (cumin, smoked paprika, chili, garlic powder, black pepper, salt, tamari/soy sauce, apple cider vinegar, and water) is the marinade for the tofu 'bacon'. Use any vegan cheese that melts well, and adjust the chili and jalapeno to your preferred spice level.
