This vegan pear cobbler is the ultimate cozy autumn dessert: juicy spiced pears under a tender golden topping, ready in about 55 minutes. Easy, dairy-free and egg-free, with a warm hint of ginger, cinnamon and cardamom.
Toss the pears with the brown sugar, ginger, corn starch, cinnamon and cardamom, then set aside.
In a mixing bowl, combine both flours with the baking powder and a pinch of salt.
In a separate bowl, mix the granulated sugar with the ground flax seeds (or psyllium husks), vanilla extract, non-dairy milk and oil.
Add the flour mixture to the wet ingredients and mix well until creamy.
Grease your baking pan with oil, add the pears and pour the batter on top.
Bake at 180 degrees C (350 degrees F) for 40-45 minutes, or until a toothpick comes out clean.
