For the salad:

quinoa

plum tomatoes
diced

cucumbers
diced

radishes
sliced

parsley
chopped

spring onions
chopped

mint leaves
finely chopped

garlic
crushed
For the dressing:

cup
mushrooms
sliced

Tbsp
flour
1
cup
coconut cream
from can

Tbsp
soy sauce

tsp
Dijon mustard

tsp
black pepper
ground

olive oil
Instructions
Boil quinoa until soft.
To prepare the dressing:
Heat a frying pan with olive oil on medium heat.
Add the sliced mushrooms and fry, stirring, until golden. Add the flour and continue frying until the flour begins to get golden.
Remove from heat and place in a blender. Add the rest of the ingredients.
Blend well in order to get a homogenous mixture with a creamy texture. Add more water if needed. Set aside.
To prepare the salad:
In a large bowl, add all the salad ingredients and stir to combine.
Serve with the mushroom dressing on top. Enjoy!
