Smoky, crispy vegan tofu bacon, marinated in a savory soy and smoked paprika glaze, then pan-fried until golden and ready in about 30 minutes. Pile it into a BLT sandwich, scatter it over salads or serve it alongside a weekend brunch.
Drain the excess liquid from the tofu block, then cut it into thin slices.
Lay the slices out in a single layer on a kitchen towel and press gently to pat them dry.
In a small container that fits the tofu slices snugly, add all the marinade ingredients and mix well.
Add the tofu slices to the marinade, making sure they are coated on both sides, and let them sit for about 20 minutes.
Heat a skillet over medium heat.
Add the olive oil. Once it is hot, lay the tofu slices in the skillet in a single layer.
Fry for about 4 minutes per side, or until golden brown and crispy.
Transfer to a paper towel to absorb the excess oil.

Notes
Use tamari instead of soy sauce to keep this gluten-free. Store the tofu bacon in an airtight container in the fridge for up to 4 days and crisp it back up in a hot dry skillet for about a minute per side before serving.
