Colorful grilled veggie skewers with tomatoes, onion, Portobello mushrooms and bell peppers, seasoned simply with paprika, salt and pepper. A quick, plant-based BBQ favorite ready in about 20 minutes.
This one is easy: chop all the veggies into large, even chunks, season with sweet paprika, salt and pepper, then thread them onto the skewers. Grill over medium-hot coals, turning to char all sides, until the onion and peppers have softened and the mushrooms are tender.
Notes
Assemble the skewers a few hours ahead and refrigerate until you're ready to grill. If using wooden skewers, soak them in water for about 30 minutes first so they don't burn.
