A hearty one-pot vegan Irish stew loaded with potatoes, carrots and mushrooms in a rich tomato-herb broth. Cozy, comforting and ready in about 35 minutes.
Heat the olive oil in a pot over medium heat. Add the chopped garlic and onion.
Once golden and translucent, add the flour and fry for about 30 seconds.
Add the rest of the vegetables. Season with oregano, salt and black pepper.
Fry, stirring occasionally, until the vegetables develop a bit of color (5-7 minutes).
Add the tomato paste and fry for another minute, then pour in the vegetable broth until it barely covers the vegetables.
Once boiling, reduce the heat to low and simmer for about 15-20 minutes, or until the potatoes and carrots are fully cooked through.
Garnish with freshly chopped parsley and serve.
Notes
For the best texture, cut the vegetables into similar chunky pieces so they cook evenly, and cut the potatoes and carrots slightly smaller since they take longest. The stew tastes even better the next day.
