Vitamin Salad with Citrus Dressing

A fresh, no-cook vitamin salad of peppery greens, toasted walnuts and juicy orange, brightened with a tangy citrus dressing. Ready in just 10 minutes and perfect as a light side.

Choose Serving Size 2 -4 servings as a side to other meals

Ingredients 

  • a generous mix of arugula and mizuna leaves you can also use baby spinach in this mix
  • a handful of walnuts lightly toasted, roughly crushed
  • 10 sun-dried tomatoes in oil chopped
  • 1 orange peeled and sliced

Dressing:

  • juice of 1 orange
  • juice of ½ lemon
  • ½ Tbsp Dijon mustard
  • ½ tsp honey swap for maple syrup or agave for a vegan version
  • 3 Tbsp oil from the sun-dried tomatoes reserved from the jar
  • ¼ tsp salt plus ¼ tsp ground white pepper

Instructions

  • Put the washed mix of leaves in a large bowl. Add the toasted walnuts on top, along with the chopped sun-dried tomatoes and orange slices.
  • Whisk all the dressing ingredients together until well combined.
  • Pour the dressing over the salad and toss just before serving.

Notes

Dress the salad only right before serving so the leaves stay crisp. For a vegan version, swap the honey in the dressing for maple syrup or agave.
