This warm green pea salad pairs sweet steamed peas with a creamy avocado mayo and fresh mint for an incredible taste and texture. It comes together in about 25 minutes and works beautifully as a light salad or side dish.
Steam the frozen peas using a steamer for about 15 minutes. Steamed peas are sweeter and look better than boiled peas, so I strongly recommend steaming them instead of boiling.
Add all the avocado mayo ingredients to a blender and blend well until smooth.
Put the steamed peas in a large bowl. Add the julienned onion and chopped fresh mint. Add the avocado mayo and mix well.
Serve and enjoy!
Notes
Let the steamed peas cool for a few minutes before dressing so the avocado mayo coats them rather than sliding off. Best served fresh; store leftovers in an airtight container in the fridge for up to 1 day.
