Wash the potato well. Chop it into cubes (I left the skin on).
Chop the onion, carrot and pepper.
Add the veggies and sliced mushrooms to a pot together with the rice, cover with veggie stock and bring to a boil. Season with salt and pepper and cook until the rice is fully cooked through (about 15 minutes).
Add the coconut milk and cook for an additional 1-2 minutes, or until the soup thickens.
Serve with chopped parsley.
Notes
Leave the potato skin on if you wash it well. Taste-test the rice as it cooks -- pure wild rice may need longer than the roughly 15 minutes a blend takes. Store leftovers in an airtight container in the fridge for up to 3 days.
