This zucchini salad with mint and pickles is inspired by one of Jamie Oliver's 15-minute recipes. This quick and savory salad is raw, vegan and macrobiotic.

Ingredients 

  • 3 zucchinis grated
  • 2 carrot grated
  • 2 tomatoes chopped
  • 6 pickles sliced
  • 2 pinches chili powder
  • 2 cloves garlic mashed
  • 1 handful fresh mint chopped
  • 4 Tbsps extra virgin olive oil
  • ½ lemon juice only
  • salt to taste
  • freshly ground black pepper to taste

Instructions

  • Grate zucchinis and carrots.
  • Slice pickles.
  • Put them in a large bowl. Add the rest of the ingredients and mix. That's it!
