Hummus Flatbread Pizza

A crisp homemade flatbread spread with creamy hummus and topped with roasted peppers and crumbled blue cheese, then finished with a drizzle of chili oil. A savory, veggie-friendly twist on pizza night that comes together in about 40 minutes.

Ingredients 

For the base:

  • 175 g flour
  • 140 ml water
  • 1 tablespoon olive oil
  • ½ teaspoon salt

For the topping:

  • cup hummus
  • 4 roasted peppers canned, sliced
  • 100 g blue cheese crumbled, optional, skip for vegan version
  • chili-infused olive oil for drizzling

Instructions

  • Heat the oven to 240°C (460°F).
  • Put the pizza pan in the oven and let it heat up as well.
  • Prepare the base: mix the flour and salt in a bowl, then pour in the water and olive oil. Mix until a dough forms.
  • Shape the dough into a ball, cover it with a towel and leave it at room temperature for 15-20 minutes.
  • Then roll out the dough on a lightly floured surface until you get a thin, smooth base.
  • Transfer the base to a sheet of baking paper, spread it with hummus and arrange the peppers and pieces of blue cheese on top. Slide it onto the hot pizza pan, return it to the oven and bake for 8 minutes, or until the edges are well browned.
  • Remove it from the oven, drizzle with the chili oil and serve hot.

Notes

Naturally vegetarian. To make it vegan, simply skip the blue cheese or swap it for a dairy-free crumble. Best served hot straight from the oven so the base stays crisp.
