Raw Citrus Carob Pudding

 This raw citrus carob pudding is a healthy, vegan dessert you can eat for breakfast! It’s nourishing and diet-friendly too! 

I made THE BEST no-bake cake yesterday. The best. No doubt. It was so good, I just can’t wait to make it again, also because it was late and I didn’t take any photos of it. I’ll give you just a hint, it involves peanut butter, bananas and chocolate. Best combination ever! It was DIVINE!

Ok, now that I bragged about my most-amazing-cake-ever, let’s talk about the recipe here. This raw citrus carob pudding is the simplest healthy “chocolate” pudding you can make. It’s also very versatile, so if you use the basic ingredients, carob + bananas + sweetener + psyllium husks, you can add pretty much any other toppings you like. In this case I used oranges and orange juice, to give it a fresh, citrus flavor.

I ate this citrus carob pudding for breakfast. If you’re craving dessert for breakfast, then carob puddings are the best choice! Not only they have a rich chocolate taste, but they are also nutrient-rich and absolutely diet-friendly!

Ingredients

  • 2 bananas
  • 1 Tbsp carob powder
  • 1 Tbsp psyllium husks
  • 1 orange, halved
  • 1 tsp healthy sweetener of choice, I used honey

Instructions

  1. Cut the orange in half. Juice one half. Peel and cut in small cubes the other.
  2. Add bananas, carob powder, psyllium husks, orange juice and sweetener in the blender.
  3. Blend until smooth,
  4. Let it rest in the fridge for 5 minutes,
  5. Top with chopped orange and eat!

So refreshing and filling - perfect for everyday breakfast! My daughter loves it too because of the oranges, she's a big citrus fan and this has become our favorite breakfast so far. It's just awesome!
