This baked scallions with za’atar and olives recipe is a very simple, vegetarian/vegan side dish, inspired by one of Jamie Oliver’s recipes. You’ll be amazed by how delicious this is!
Yesterday, I discovered a great recipe while I was reading Jamie Oliver’s book “Cook with Jamie: My Guide to Making You a Better Cook”. This baked scallions side dish recipe is inspired by one of Jamie’s vegetarian recipes from the book. The original recipe was made with young leeks and butter, no za’atar or olives added. I adapted the recipe and I believe that I made it even better!
I never baked scallions before. I always ate them fresh, usually in salads, or added in my veggie patties recipes. This was something new to me, but because I love onions so much, I decided to give it a try. This baked scallions recipe turned ot to be an amazing vegetarian side dish!
I ate baked scallions with polenta and mushrooms stew for lunch yesterday. I loved it so much that I made it again for dinner and for today’s lunch! I never thought this would be so good!
Yesterday was also the day when I first tried cooking with za’atar. I’ve heard about this great spice mix, but never had the chance to use it in my recipes. I bought some yesterday from my local spices shop and I absolutely fell in love with it! It’s like it adds flavor to everything! It’s also amazing sprinkled on hummus. Delicious! Baked Scallions with Za’atar and Olives
- 20 scallions
- 1-2 Tbsps extra-virgin olive oil
- 1 Tbsp za'atar
- some olives
- 1/2 tsp sea salt
- half a lemon's juice
- Rinse scallions very well. Remove any wilted leaves.
- Grease an oven tray with some olive oil.
- Add scallions - It's best to arrange them in one layer only, but a maximum of 2 layers of scallions are ok too.
- Sprinkle with olive oil. Add za'atar and sea salt.
- Bake in the oven at 180C/356F for 15-20 minutes.
- When you serve them, add olives and pour over some fresh lemon juice.
