3. Creamy polenta with mushrooms in white sauce

This is a very popular dish here in Romania. I like it because it’s extremely easy to make and even though the traditional recipe contains dairy, I think my vegan version is not only healthier, but also tastes better!

To make this recipe you’ll need the following ingredients:

  • 500g button mushrooms, sliced
  • 1 onion, diced
  • 6 garlic cloves, minced
  • 3 Tbsps flour
  • 2 cups water or veggie stock
  • salt and pepper, to taste
  • 2 Tbsps oil
  • dill, chopped

Preparation:

  1. Heat oil in a large pan. Add the onion and garlic and saute for 3 minutes.
  2. Add the sliced mushrooms and cover with a lid. Let them cook for 5 minutes on medium heat.
  3. Add 1 cup of water and let them cook for 15 minutes.
  4. In a blender, blend the flour with salt, pepper and the other cup of water or veggie stock.
  5. Pour this into the pan.
  6. Cook for 5 more minutes, or until the sauce thickens.
  7. Serve with creamy polenta.

4. Vegan Potato Salad

This recipe is SO simple! For the base recipe, you need only 5 ingredients: potatoes, vegan mayo, chopped onion, salt and pepper. To make this you just boil the potatoes whole, with their peels on. When soft, transfer them to a pot with ice cold water. The peels will come off easily. Then cut in cubes, mix with the rest of the ingredients, and that’s it!

You can add other ingredients to the basic vegan potato salad to make it even better. In the video above, I added some green olives and baby spinach. You can also add pickles, herbs, other greens, and more!

5. Veggie Soup

The veggie soup recipe from the video is the easiest vegetable soup you can make! I used a frozen veggie mix for soup and boiled that, added some tomato paste, canned and chopped, peeled tomatoes, spices, some vinegar from the pickle juice jar and chopped parsley. That’s it! The actual preparation part takes less than 5 minutes.
