What is carob powder?

Nabisco's Famous Chocolate Wafers have been discontinued. There isn't a good product replacement so I am looking to bake my own wafers... And... My service dog LOVES chocolate. But because of the theobromine caffeine content he can't have chocolate. So, I also want to find a recipe that is (or that I can adjust so it is) safe to give him. "Chocolate Wafer Cookies"; anyone have any ideas?

I've recently developed an intolerance to Hershey chocolate; I have an 'acid rush/ GERD' overnight. The information I just read about carob was very helpful! I hope I can tolerate it. There are so many cookies in stores that contain chocolate. Do you know of ready-made carob cookies? I'm always looking for quick recipes.Thanks for the information; it was easy to understand.
