Chana Masala este o reteta traditionala indiana. Baza aceste mancaruri este nautul, chana insemnand de fapt naut. Acest fel de mancare a aparut prima oara la granita dintre India si Pakistan insa rapid s-a extins in ambele tari. Acum este o mancare cunoscuta la nivel international pentru explozia de arome pe care o ofera. 🙂

Chana Masala este de asemenea si un mix de condimente facut cu chili, coriandru, chimion, cardamom, scortisoara, piper, cuisoare, turmeric si pudra aamchoor – o pudra de mang care are un gust usor acrisor.

Daca vreti sa va faceti propriul mix de condimente chana masala, incercati aceasta reteta. Sau, mai simplu, cumparati mixul gata facut din magazine.

Atunci cand gatiti chana masala, sa nu omiteti piperul cayenne! Ii da o iuteala foarte placuta. De asemenea, atunci cand prajiti semintele de chimion, nu cumva sa adugat ulei. Acesta se adauga abia dupa ce au pocnit si au eliberat aroma minunata, altfel nu vor fi la fel de parfurmate ci doar imbibate in ulei.

Chana Masala

Here's a quick and easy chana masala recipe that's bursting with amazing flavors! Serve it with a side of rice and enjoy the wonderful taste of Indian spices.

Ingredients

  • 1 Tbsp coconut oil
  • 1 tsp cumin seeds
  • 1 onion, chopped
  • 1 Tbsp garlic, minced
  • 1 Tbsp fresh ginger, peeled and minced
  • 1 red bell pepper, chopped
  • 360g (1 ½ cups) peeled tomatoes, chopped
  • 500g (3 cups) cooked chickpeas
  • 200g (1 cup) red rice, for serving
  • 1 ½ tsp chana masala spice mix
  • 1 ½ tsp ground coriander
  • ½ tsp ground turmeric
  • a pinch sea salt
  • a pinch cayenne pepper
  • fresh parsley and cilantro, chopped, for garnish

Instructions

  1. In a medium pot, bring water to boil. Pour in the rice and give it a stir.
  2. Boil the rice for about 25-30 minutes, until tender, then turn off the heat and drain the excess water. Set aside.
  3. Heat a large saucepan over medium-high heat. Add the cumin seeds and toast them for a minute or two, stirring frequently, until the seeds are golden, fragrant and start to crack.
  4. Add oil.
  5. Add the onion, garlic, ginger and bell pepper. Cook for about five minutes, stirring often. Add the spices: chana masala spice mix, coriander, turmeric, salt, and cayenne. Cook for a few more minutes.
  6. Add the tomatoes and cooked chickpeas.
  7. Bring the mixture to a simmer and cook for 10 minutes or longer to allow the flavors to mix.
  8. Serve with a side of red basmati rice.
  9. Top with chopped parsley or cilantro.
