I love family recipes that are super-easy to make, delicious and use budget-friendly ingredients. This vegan potato and carrot stew with fresh tarragon is one of my favorite recipes! I learned it from my mother. She always cooks delicious recipes that can feed a whole family! I learned lots of recipes from her and I’m glad I will be able to serve great dishes, like this one, to my family.

Maybe you’ll think this is just a simple vegetarian (vegan actually!) potato and carrot stew. Well, it’s not! The fresh herbs and sweet carrots make it special! As you can see from the photos, this potato and carot stew recipe is so colorful and vibrant! And the flavours…are just yum!

Potato and Carrot Stew

This is a vegan family recipe for potato and carrot stew with fresh chopped tarragon, delicious, full of flavors and ideal for feeding a whole family!

Ingredients

  • 1 large onion, chopped
  • 2 large carrots, sliced
  • 5 potatoes, peeled and cubed
  • about 2 cups of water (more or less
  • 2 bay leaves
  • 1 tsp thyme
  • 1 Tbsp tarragon (preferably fresh)
  • 2 tsp sweet paprika
  • 1 400g can peeled tomatoes, chopped
  • 3 tbsp whole wheat flour, dissolved separately in some cold water (or corn starch - GF)
  • 1 tbsp oil
  • sea salt and pepper to taste
  • fresh parsley, for garnish

Instructions

  1. Heat the oil in a large pot and add the chopped onion.
  2. Sauté for a couple of minutes, then add cubed potatoes.
  3. Cover potatoes with water (about 2-2 1/2 cups, maybe more depending on your pot size).
  4. Add sliced carrots, bay leaves, sweet paprika, thyme, salt and pepper. Let it cook until the veggies are tender (about 20 minutes).
  5. Add flour, dissolved separately in a cup with some cold water.
  6. Add sliced, peeled tomatoes and fresh tarragon. Stir and cook for another 5 minutes.
  7. Serve with fresh parsley on top!

Iubesc mancarurile care se fac repede, sunt ideale pentru a hrani o familie intreaga, iar pe langa asta mai sunt si economice, si delicioase! Reteta asta de mancare de cartofi si morcovi cu tarhon proaspat, este una dintre retetele mele preferate. Am invatat reteta asta de la mama mea. Ea gateste mai mult mancaruri de familie, mancaruri care se fac repede si care ne pot hrani si cateva zile. Eu am invatat multe retete ca aceasta de la ea si ma bucur ca voi reusi si eu la randul meu sa imi delectez familia cu astfel de mancaruri simple, dar extrem de gustoase.

Poate o sa credeti ca este o simpla reteta vegetariana (vegana chiar!) de mancare de cartofi si morcovi. Ei bine, nu e chiar asa! Condimentele si combinatia cu morcovul dulce o fac sa aiba ceva special. Plus ca dupa cum puteti vedea din poze, e o adevarata explozie de culoare!

Daca va place reteta mea de mancare de cartofi si morcovi cu tarhon, puteti intra pe pagina de concurs si sa ma votati dupa data de 14 octombrie! De abia astept sa pot testa multicookerul Philips si sa vad daca mancarurile ies mai bune intr-un timp mai scurt. Ar fi ceva! :D

Mancare de cartofi si morcovi cu tarhon

Ingrediente pentru 6-8 portii de mancare de cartofi:Mancare de cartofi si morcovi cu tarhon

  • 1 ceapa mare, maruntita
  • 2 morcovi mari, feliati
  • 5 cartofi, curatati si taiati cubulete
  • vreo 2 cani de apa (poate mai mult daca e nevoie)
  • 2 frunze de dafin
  • 1 lingurita de cimbru uscat
  • 1 lingura de tarhon proaspat
  • 2 lingurite de boia dulce
  • o conserva de 400g de rosii cubulete, decojite
  • 3 Linguri de faina integrala – dizolvate separat in putina apa rece
  • 1 Lingura ulei
  • sare si piper, dupa gust
  • mult patrunjel proaspat

Instructiuni:

  1. Incalzeste uleiul intr-o cratita mare si adauga ceapa. Caleste ceapa cateva minute si apoi adauga cartofii taiati cubulete. Acopera-i cu apa (aprox. 2 cani de apa, sau poate putin mai mult).
  2. Adauga morcovii feliati, frunzele de dafin, boiaua dulce, cimbru, sare si piper.
  3. Lasa-le sa fiarba aproximativ 20 de minute.
  4. Adauga faina, dizolvata separat, si amesteca. Adauga tarhonul proaspat si rosiile cubulete. Lasa-le sa fiarba inca 5 minute.
  5. Serveste mancarea de cartofi cu patrunjel proaspat pe deasupra.
