Seriously now, every time I put together a menu for a special celebration such as Christmas, New Year’s Eve, or Easter, the thing I’m most excited about is appetizers.
I think they’re super fun to eat and even more fun to make. Every year for Easter I try to create a completely vegetarian menu that includes cute appetizers, an impressive main dish, one or two side options, and, of course, dessert.
The main dish is usually either a vegan “rack of lamb” (yep, that exists and I definitely recommend trying my linked recipe) or a vegan roast such as tofu or nut roast. I also try to keep the sides on the healthy side and I try to use spring vegetables that are in season at the farmer’s market at that moment. As for the dessert, I try to make something that’s both quick and impressive, maybe also decadent and with lots of chocolate, haha.
As for the appetizers… that’s where I go crazy. After all, there are SO many amazing appetizer recipes out there, it’s hard to choose only one! This is why I usually make a variety of appetizers for everyone to choose from. Crostini, pies carefully cut into tiny square pieces, veggie rolls, pinwheels, and everything in-between. I told you, appetizers are my thing!
