Pink Ginger Beet Lemonade

This pink ginger beet lemonade is a great lemonade recipe with a twist! It has a lovely ruby color, sweet taste, and spicy flavor!  It’s perfect as a refreshing summer drink! 

It’s the middle of May and the weather is crappier than ever! Thunderstorms at night, heavy rains in the morning and cloudy afternoons…aaargh! Summer please come! I’m waiting for you!

My mood depends a lot on the weather outside. Really. If it’s sunny and warm, I’m the happiest and most productive person on the planet! If it’s rainy and cloudy, oh well, I could sleep all day and do nothing. I get depressed. That’s why I could never live in cold countries. Maybe it sounds foolish to you, but for me it’s really a problem. I can’t get anything done when it’s bad weather outside! That’s one of the reasons why I didn’t post a recipe on the blog in a while. Well, I was really busy too with architecture projects and lots of work…but still.

Anyway, I was thinking of summer when I made this pink ginger beet lemonade! Doesn’t it look amazing?! I love the dark red – light pink ombre it has. If you think it looks good, just wait until you’ve tasted it! It’s really good, probably the best lemonade ever!

Ginger Beet Lemonade limonada sfecla

This ginger beet lemonade is a great lemonade recipe with a twist! It has a lovely ruby color, sweet taste, and spicy flavor!

Total Time 5 minutes

Ingredients

  • ½ beetroot
  • 2 lemons
  • a thumb-size piece of ginger
  • honey, to taste or another healthy sweetener
  • water

Instructions

  1. Juice lemons.
  2. Add beetroot and ginger in your juicer and juice them too.
  3. Mix the lemon juice with the beetroot and ginger juice. Add water to dilute.
  4. Add healthy sweetener of choice, to taste.

I love ginger and also beet but I never thought to combine them in a juice. It's absolutely delicious and it has helped me a lot iron deficiency :) Thank you for sharing!
