Beetroot Galette

A beetroot galette is a free-form, rustic tart that wraps sweet baked beets and creamy cheese in a flaky, buttery crust. There is no tart tin and no fussy edges: you roll out one round of dough, pile the filling in the center, fold the sides up over it, and bake. It is the easiest way to turn an everyday root vegetable into something that looks like it came from a bakery window.

Why Beets Belong in a Galette

Beets are one of those vegetables that get neglected in the kitchen. Beyond the classic beet salad, cooked or raw, or a glass of beet juice, this root has so much to offer that it feels like a waste not to use it more often. Today I chose to use it in a tart, and the combination of salty cheese and the sweetness of baked beets is absolutely surprising!

That contrast is the whole point of the recipe. As beets bake, their natural sugars concentrate and deepen, and that mellow sweetness plays against the sharp, salty Parmesan and the tang of cream cheese. Wrap it all in buttery pastry and you get a dish that works as a light lunch, a starter, or the centerpiece of a meatless dinner.

What You Need for This Beetroot Galette

The ingredient list is short, and most of it is pantry staples. Here is what each part does:

  • Cold butter and flour — the base of the crust. Cold butter is what gives you those flaky, layered pockets, so keep it chilled right up until it goes into the food processor.
  • Very cold water and lemon juice — the water brings the dough together, and a tablespoon of lemon juice keeps the pastry tender.
  • Boiled, sliced beets — three red beets, cooked and sliced into rounds. If you are not sure of the best way to prep them, my guide on how to cook beetroot walks through boiling and roasting.
  • Cream cheese and onion powder — spread over the dough as a creamy, savory layer under the beets.
  • Parmesan, olive oil, thyme and oregano — the finishing touches. Parmesan adds salt and depth, olive oil helps the edges brown, and the fresh herbs bring it all together.

Since this galette uses butter, cream cheese and Parmesan, it is a vegetarian recipe rather than a vegan one. If you want to keep it fully plant-based, swap in a vegan cream cheese and a vegan hard cheese, and use a plant-based butter for the crust.

How to Get a Flaky, Buttery Crust

The crust makes or breaks a galette, and the trick is to keep everything cold and to avoid overworking the dough. Add the flour and half the cold butter to a food processor and blend for about 20 seconds in short pulses, then add the rest of the butter and blend for another 5 seconds. Pour in the cold water mixed with lemon juice and knead for just 5 to 10 seconds, only until a ball forms. Do not over-process, or the crust will turn tough instead of flaky.

Turn the dough onto a floured surface, roll it out once, then fold it back over itself like closing an envelope from all sides. This quick fold builds a few extra layers. Wrap it in plastic and chill it in the fridge for at least an hour or two before you roll it out for good. Cold, rested dough is far easier to handle and bakes up much crisper.

Assembling and Baking the Tart

Once the dough is chilled, roll it into a rough circle and lift it onto a parchment-lined baking tray. Heat the oven to 200 C (390 F). Spread the cream cheese over the dough, sprinkle with onion powder, then arrange the beet slices so they cover the whole surface except for a border of about two fingers around the edge. Fold that border up and over the filling, pleating as you go, so it holds everything in place.

Drizzle the top with olive oil, scatter over the thyme and oregano, and bake for 30 to 40 minutes, until the edges are deeply browned. Finish with freshly grated Parmesan the moment it comes out of the oven so it softens against the warm beets. This same fold-and-bake method is a classic of French cuisine, and once you have it down you can build a galette around almost any vegetable.

What to Serve With Beetroot Galette

This tart is rich and filling, so it pairs best with something fresh and crunchy on the side. A bright, acidic salad cuts through the buttery pastry beautifully. Try it alongside a chickpea and roasted beetroot salad if you want to lean into the beet theme, or keep things crisp with a bowl of root vegetable coleslaw. Cut the galette into wedges and serve it warm or at room temperature.

Make-Ahead and Storage Tips

The dough is the perfect make-ahead component. You can prepare it a day in advance and keep it wrapped in the fridge, or freeze it for longer storage and thaw it overnight before rolling. You can also boil and slice the beets ahead of time so assembly takes just a few minutes. Once baked, leftover galette keeps in an airtight container in the fridge for up to three days; warm it back up in the oven to bring the crust back to life rather than the microwave, which can leave the pastry soft.

Frequently Asked Questions

Is beetroot galette vegan or vegetarian?

As written, this beetroot galette is vegetarian. The crust uses butter, and the filling includes cream cheese and Parmesan, all of which are dairy. To make it vegan, swap in plant-based butter, vegan cream cheese, and a vegan hard cheese.

Do I need to cook the beets before making the galette?

Yes. The recipe uses three red beets that are boiled and then sliced into rounds before they go onto the dough. Pre-cooking softens them and concentrates their sweetness, since the 30 to 40 minute bake is meant for crisping the crust rather than fully cooking raw beets.

Can I make the galette dough ahead of time?

Absolutely. The dough needs to chill for at least an hour or two anyway, so you can make it a day ahead and keep it wrapped in the fridge, or freeze it and thaw it overnight. You can also boil and slice the beets in advance so the final assembly only takes a few minutes.

What oven temperature and baking time should I use?

Heat the oven to 200 C (390 F) and bake the assembled galette for 30 to 40 minutes. It is done when the folded edges are deeply browned. Add the freshly grated Parmesan right after it comes out of the oven.

Why did my galette crust turn out tough instead of flaky?

A tough crust usually comes from warm butter or from over-processing the dough. Keep the butter and water very cold, pulse only in short bursts, and knead just 5 to 10 seconds until a ball forms. The envelope fold and a solid chill in the fridge also help build flaky layers.

What should I serve with beetroot galette?

Because the tart is rich and buttery, it pairs best with something fresh and acidic. A chickpea and roasted beetroot salad or a crunchy root vegetable coleslaw both balance it nicely. Serve the galette in wedges, warm or at room temperature.
