Lettuce is full of vitamins such as K and A, broccoli is rich in fiber and folate and can help prevent diabetes and edamame is rich in protein and vitamin C. The health benefits change depending on which green vegetable we’re talking about, but all of them have one thing in common: they’re super healthy and they are known to reduce the risk of numerous diseases such as obesity, diseases related to mental decline, heart diseases and more.
You know what they say… eat the rainbow! Well, when it comes to ‘green’, all the veggies I mentioned in the list above are great contendants.
Another great advantage of green vegetables is that they’re so varied, they can easily be incorporated into numerous recipes.
