How is silken tofu made?

The slurry is then combined with a coagulant, like nigari (magnesium chloride), which causes the proteins in the mixture to form clumps of curds. These curds are separated from the liquid whey by straining or pressing them through cheesecloth. This results in a high-protein vegan ingredient that you can make at home as well.
