Variations and dietary adaptations

  • Vegan loaded potato soup: To prepare a loaded potato soup in a vegan style, you can replace the traditional milk with a vegetable version, such as almond, soy or oat milk. Also, use vegan cheese or a nut-based or nutritional yeast-based cheese substitute to provide that specific creaminess. As toppings, opt for vegan bacon or crispy croutons to add texture.
  • Low-carb loaded potato soup: If you want to reduce carbs, replace potatoes with cauliflower. Cauliflower has a similar texture when boiled and mashed, but with much fewer carbohydrates. You can follow the same basic recipe, but using cauliflower instead of potatoes. This will significantly reduce the carbohydrate content, making the soup friendlier for those following low-carb or keto diets.
  • Spicy Loaded Potato Soup: For spicy food lovers, add finely chopped jalapeños or chili flakes to the soup. They will add extra heat and flavor. You can also experiment with other types of hot peppers or even add a dash of hot sauce for extra flavor. Be sure to add these spicy ingredients gradually, tasting constantly, to adjust the level of spiciness to your preference.

Each of these variations offers a new perspective on the traditional potato soup, allowing you to experiment and enjoy different tastes and textures, depending on your preferences or dietary needs.

Tips and tricks for the best potato soup

Here are some tips and tricks for cooking, which will help you get the perfect consistency of potato soup, choose the best type of potatoes and use the slow cooker or Instant Pot effectively for this recipe:

  1. Obtaining the perfect soup consistency: The secret of a creamy soup is the correct ratio between liquid and potatoes. If the soup is too thick, add more vegetable stock or water. If it is too thin, let it boil on low heat to reduce. You can also mash part of the potatoes to get a creamier consistency without adding cream or milk.
  2. Choosing the type of potatoes: For potato soup, potatoes with a higher starch content are the most suitable. White potatoes, Idaho potatoes or Russet potatoes are ideal for this recipe. These potatoes open easily when cooked, giving the soup a smooth and creamy texture.
  3. Using the Slow Cooker: The slow cooker is perfect for cooking potato soup, because it allows the flavors to meld slowly and deeply. Add the potatoes, vegetables and liquid to the slow cooker and set it on slow cooking for 6-8 hours. This will make all the ingredients cook evenly and become very tender.
  4. Using the Instant Pot: The Instant Pot is a great time saver. Use the pressure cooking function to quickly cook potatoes and vegetables. It will usually take about 10 minutes under high pressure. After cooking, use the quick pressure release function and then use a hand blender to puree the soup to the desired consistency.
  5. Adjusting the taste: Do not forget to adjust the taste of the soup at the end. Add salt, pepper, and other favorite spices, such as garlic powder or onion powder, to intensify the flavor.
  6. Adding toppings: Toppings add extra texture and flavor to your soup. You can add chopped green onions, fried bacon (or the vegan version), grated cheese (or the vegan version), crispy croutons or even a splash of cream or Greek yogurt for extra creaminess.

Pairing suggestions for potato soup

  • Croutons: Nothing compares to a slice of crusty bread or a fresh baguette, ideal for dipping into soup. Thick-crust bread or even focaccia with aromatic herbs are excellent choices, providing additional texture and taste to your meal.
  • Fresh salad: A light green salad can balance the richness of the potato soup. Try a salad with arugula, young spinach, cherry tomatoes and a light balsamic or lemon dressing to add a touch of freshness.
  • Wine pairings: For a more sophisticated dinner, choose a wine that complements the richness and texture of the soup. A rich and buttery Chardonnay or a fruity Pinot Gris go well with the creaminess of the soup. If you prefer red wine, a Pinot Noir, which is lighter and with moderate acidity, can be a good choice.
  • Bruschetta or Crostini: For an appetizer before serving the soup, bruschetta or crostini with various toppings, such as tomatoes with basil, wild mushrooms or even a mixture of olives, are delicious and easy to prepare options.
  • Grilled or steamed vegetables: A serving of grilled vegetables, such as asparagus, zucchini or red peppers, can add a healthy and colorful touch to your meal. Steamed vegetables, such as broccoli or cauliflower, are also a good choice, especially if sprinkled with a little olive oil and spices.

  • 2 tablespoons butter
  • 1 onion chopped
  • 3 cloves garlic crushed
  • cup flour
  • 4 cups vegetable stock
  • 2 cups milk
  • cup liquid cream
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • ½ teaspoon cayenne
  • cup sour cream

For the topping:

  • 6 Tbsp cheese grated
  • green onion chopped
  • chilli flakes

  • Begin by heating oil and butter in a pan or deep pot over medium heat.
  • Once the butter is melted, add chopped onion and sauté until soft, about 3-4 minutes.
  • Next, stir in crushed garlic and cook for 30 seconds.
  • Add flour, whisking well to create a thick base.
  • Then, mix in potatoes, broth, milk, cream, salt, pepper, and cayenne, blending until all ingredients are well combined. Bring the mixture to a boil, then reduce heat to low and simmer for 20 minutes, or until potatoes are tender.
  • Keep the heat low. Carefully transfer half of the soup to a blender, processing until smooth and creamy.
  • Return this to the pot, adding sour cream and stirring until well mixed.
  • Continue to simmer for another 10 minutes on low heat.
  • Serve hot, garnished with grated cheese, chopped green onions, and a sprinkle of chili flakes for an extra kick
